Frico Friulano is a beloved specialty from Friuli Venezia Giulia made with crisp, golden cheese and tender potatoes. With its crunchy exterior and soft, savory center, this rustic dish is commonly served as an appetizer or light meal and showcases the rich flavors of Montasio cheese.

Heat the butter and olive oil in a large nonstick skillet over medium heat.
Add the sliced onion and cook until soft and lightly golden, about 8 minutes.
Stir in the grated potatoes and cook for 10 minutes, stirring occasionally, until they begin to soften.
Season lightly with salt and black pepper.
Young Montasio produces a softer, creamier Frico, while aged Montasio creates a crispier texture with a more pronounced flavor. Use a nonstick skillet and flip carefully to maintain the dish's signature golden crust.
Add the grated Montasio cheese and mix until evenly combined.
Press the mixture into an even round, flattening it with a spatula.
Cook undisturbed for 8 to 10 minutes until the bottom is deep golden and crisp.
Carefully invert the frico onto a large plate, then slide it back into the skillet.
Cook the second side for another 6 to 8 minutes until crisp and golden.
Transfer to a serving board and let rest for 2 minutes.
Slice into wedges and serve immediately.
