This light and tender jelly roll is the kind of simple homemade dessert that brings everyone back to the kitchen table. A soft vanilla sponge is baked until just golden, spread generously with your favorite fruit jelly, and gently rolled while still warm. Finished with a snowy dusting of powdered sugar, every slice reveals a beautiful swirl of cake and bright, fruity sweetness. It is lovely served after a big family meal, alongside an afternoon espresso, or chilled for a refreshing summer treat. Choose raspberry, strawberry, apricot, or whatever preserve your family loves most.

Every Saturday morning at Louise’s house, the kitchen seemed to wake before the rest of the family. The coffee would begin brewing, the radio would play softly, and the sweet scent of vanilla cake would drift through the rooms. Her jelly roll was never reserved for a holiday or special occasion. It was simply part of Saturday—a quiet family tradition that let everyone know they were welcome. Sometimes she filled it with strawberry jelly, sometimes raspberry or apricot, depending on what was in the pantry and which grandchild was nearby to offer an opinion. By late morning, the cake would be resting on the table beneath a snowy covering of powdered sugar. Family members would arrive one by one, drawn into the kitchen for a slice, a cup of coffee, and the latest family news. To us, Louise’s jelly roll was more than a dessert. It was the taste of Saturday mornings, an open kitchen door, and the comfort of knowing there was always a place waiting for you at her table.
Preheat the oven to 350°F. Lightly grease a 15½ x 10½-inch jelly-roll pan, then line it with parchment paper.
Separate the eggs. In a clean bowl, beat the egg whites with the baking powder until they become light, fluffy, and hold soft peaks.
In a separate bowl, beat the egg yolks with the sugar until the mixture is pale, creamy, and slightly thickened.
For the softest cake, fold the egg whites into the batter gently so they keep as much air as possible. Roll the cake while it is still warm to help prevent cracking. Stir or slightly warm the jelly before spreading so it glides easily across the sponge, but avoid adding too much or it may squeeze out while rolling. Let the finished roll cool seam-side down before dusting it with powdered sugar and slicing.
Gradually add the flour to the egg-yolk mixture, mixing gently until everything is combined.
Stir in the vanilla and water, blending until the batter is smooth and fragrant.
Gently fold the beaten egg whites into the yolk mixture a little at a time. Take care not to deflate them—this is what gives the cake its soft, airy texture.
Pour the batter into the prepared pan and spread it evenly into the corners with a spatula.
Bake for 15–18 minutes, or until the cake is lightly golden and springs back when gently touched in the center.
Loosen the edges with a butter knife. Carefully turn the warm cake onto a clean, lightly dampened kitchen towel and gently peel away the parchment paper.
While the cake is still warm, spread it with your favorite jelly, leaving a small border around the edges. Using the towel to guide you, gently roll the cake into a snug spiral. Place it seam-side down, allow it to cool, and finish with a generous dusting of powdered sugar before slicing
